For me, springtime and lemon bars go hand in hand. Like the homemade applesauce and risotto this recipe is one my mama made over and over growing up. I am sure Jamie can remember these yummy bite sized bars too. They are the perfect blend of sweet to the lemon-y tartness.

The recipe is actually this Land O’ Lakes recipe. My mom always says if you’re not sure what to do with an ingredient, try the recipe on the box/bag/container etc. The company is always going to highlight their product the best way possible and those recipes are usually successful. This one was on a box years ago and the rest of the family was hooked!
